WineSpectator om årgang 2003
"Wild, like an untamed forest, with a hint of menthol in the aroma, this shows surprising finesse, with a silky texture and dense but finely woven tannins. It remains fresh and persistent on the finish, with a lasting impression of sweet fruit. Best from 2009 through 2028. 24 cases made. -BS"

Description
The 2000 Grand Cru Chambertin Clos de Bèze is a wine of classical elegance and finesse. It starts with aromas of bright cherry, toast and rose petals. On the palate its soft, fine tannins nicely balance the concentrated, sweet red fruits and a subtle layer of vanilla oak. It finishes long and sweet and complex. It is, however, produced in tiny quantities. This classic Grand Cru can be enjoyed young and will also take 7-10 years age in bottle.
Martin Bart is the genial and enthusiastic proprietor/winemaker of Domaine St. Martin. Domaine St. Martin is, in fact, a set of cuvées custom-made at the estate for Patrick Lesec. Patrick consults closely with Martin on the élevage of these cuvees.
The domaine is the successor to the old estate of Clair Dau, and has 15 hectares of vineyards ranging in age from 15 to over 60 years. Yields are kept low and the fruit is harvested at maximum ripeness.
The wines go through a cold maceration for 5-6 days and fermentation lasts 15 days. The grands crus and Fixin Hervelets are aged in new barrels. The aging programs for the Marsannays and Santenays are determined individually. The wines are racked once by hand before bottling and are not fined or filtered.
Great care is taken to maintain the purity and freshness of the fruit. The wines across the board are truly lovely with fragrant aromas, sweet fruit, fine textures and long, complex finishes.
